Cebul\u0119 siekamy. Do garnka wlewamy oliw\u0119 i podsma\u017camy na niej cebul\u0119. Nast\u0119pnie dodajemy topinambur i sma\u017cymy 2-3 minuty. Ca\u0142o\u015b\u0107 zalewamy wod\u0105, dodajemy curry, s\u00f3l, li\u015bcie kafiru i gotujemy 25 minut. Po tym czasie dodajemy cukinie pokrojon\u0105 w grub\u0105 kostk\u0119 i gotujemy kolejne 20 min. 10 minut przed ko\u0144cem gotowania dodajemy mleko kokosowe oraz posiekan\u0105 natk\u0119 pietruszki.
